Exciting chicken recipes?

I would like to make a nice dinner for my boyfriend and I tonight since I will be leaving for a week or so on business and we won't be seeing each other for a bit. I am thawing a package of chicken . I would like to do something relatively simple but different. Maybe something cheesy or creamy...ANY ideas for me to ponder would be great. Thanks!
